Kabul (BNA) As one of the traditional Afghani food, Bolani cooking has been common since years by ladies.
Cooking Bolani has found good marketing in recent years as Sher Agha Bolani shop is one of them.
In an interview with The Kabul Times reporter, Haji Sher Agha said:For 26 years, I have been involved in this business. At the outset, I cooked Bolani at home and sold it to people in bazaar. Gradually my customers increased, and I rented this shop in DehAfghanan area and my selling is very good, and I cook 1800 Bolani every day and supply to customers in Kabul.
“I knead over four sacks of flour and use over 70kg Leek and 420kg Potatoes every day. I buy materials, check them and wash them well. Now, I have employed nine workers including my two sons. Their salaries are between Afs 400-500 per day. Beside that, I take care of their clothes and medical needs. Even one of my employees has been working with me for 22 years,” he added.
He went on to say, beside Bolani, he was also preparing Yoghurt from pure cow milk, as according to him customers eat Bolani with yoghurt and Chutney. “My customers include government employees, shopkeepers, ladies who come to bazaar for shopping and locals, school students. I am happy with this small shop although I pay for it US $1200 per month.”
One of enthusiasts of Sher Agha Bolani and his permanent customers Dr. Ahmad Arif Nooryar said, ten years ago he was informed about Sher Agha Bolani shop, but he had failed to find its precise location, but fortunately found it
He said, I want Sher Agha to make Bolani common out of Afghanistan too on the condition of possibility.
Zarmina one of the locals who had offered Bolani and yoghurt said, Bolani was one of the famous foods in Afghanistan, adding Sher Agha Bolani enjoys particular reputation among Kabul residents. “Since over 12 years, I have been his customer. I have a party today and have offered 60 Bolani and a Bucket of yoghurt to my guests.
